The wine goes through constant punching down to give the wine body and texture due to Kyoho's inherent low tannin content. The inspiration for this wine is a carbonic maceration style Gamay. The result is something completely unique with great aroma and superior quaffability. 606 bottles bottles produced. No SO2 was used.

The wine is fully hand de-stemmed and goes through spontaneous fermentation with wild yeasts
small old barrels
matured for 10 months in used 225L barrels and 15 ppm sulphites added just before bottling
the red wine was entrusted to Cave Hatano in Tomi City
100% of the grapes are coming from the famed Kimura Farm
Bijou Noir
Grapes are 54% from Ara Vineyard in Misono and 46% from Kimura Vineyard in Nobori within Yoichi
