showing great balance
which is a blend of Pinot Noir and Meunier
The palate takes this freshness and adds a beautifully green savor of chervil crushed in cream alongside lime zest and white peppercorns
offering up complex aromas of sweet stone fruit
Ageing in large oak “foudre” for 18 months
but it expanded as it warmed up on the palate and with air/warming up some in the bottle
Mourvèdre and Cinsault but there are pockets of old-growth vines of Syrah
repaying 10+ years of cellar time
After bottled for the second fermentation and kept in their 19th century cellars for a minimum of 3 years and as much as 10 years before being disgorged
