LARK RUM CASK III 500MLLarks have dabbled in Rum cask matured whiskies before. This is their third bottling and the largest outturn to date, with 1400 bottles produced. The results can work extremely well, especially complimenting a malt as rich as theirs. The distillery launched their own rum in 2008 which in later iterations was marketed as "Quiet Cannon Rum". It left the distillery with a treasure trove of rich, sweet and decadent empty rum casks. They selected the
lifted character with strawberry and eucalypt notes
but fine tannin and a rasp of refreshing plum-skin tart acidity
and full-bodied

The palate is bitter and bright
Drinking beautifully now but could age until 2035 or so
On the palate lively acidity helps define cassis fruit that has notes of graphite
